Ingredients:

  • 2 lbs (908 grams) thawed, pre-cooked lobster claw and tail meat
  • 1/4 lb (1 stick / 113 grams) unsalted butter
  • 4 hot dog style brioche buns
  • Salted melted butter for topping
  • Fresh chives, finely chopped (for garnish)
  • Lemon wedges (for serving)
  • Fries or chips (for serving, optional)

Instructions:

  1. Prepare the Lobster:

    • Ensure the pre-cooked lobster claw and tail meat is fully thawed.
    • Drain the lobster meat in a strainer to remove excess liquid, then pat it dry with paper towels.
    • In a large pot, melt 1/4 lb (1 stick / 113 grams) of unsalted butter over medium-low heat.
    • Once the butter is melted, add the thawed lobster meat to the pot.
    • Gently heat the lobster meat in the butter until warmed through, being careful not to overcook it. Stir occasionally to ensure the lobster is evenly coated in butter.
  2. Prepare the Brioche Buns:

    • Take the hot dog style brioche buns and cut them in half lengthwise.
    • Trim off the edges of the buns to create a flat surface.
    • In a large skillet or on a griddle, melt a generous amount of butter over medium heat.
    • Place the flattened sides of the buns in the skillet and toast until golden brown, about 2-3 minutes per side. Ensure they are evenly toasted for a perfect crunch.
  3. Assemble the Lobster Rolls:

    • Place the warm, buttered lobster meat directly into each toasted brioche bun.
    • Drizzle each lobster roll with a bit of salted melted butter for extra flavor.
    • Garnish the top of the lobster meat with finely chopped fresh chives.
  4. Serve:

    • Serve each lobster roll with a lemon wedge on the side for squeezing over the top.
    • Optionally, accompany the lobster rolls with a side of crispy fries or chips for a classic touch.
