Hearty Paleo Banana Bread | GF/Paleo/Dairy-Free
This Paleo banana bread is soft, moist, and naturally sweetened with bananas—no added sugar needed! It’s gluten-free, dairy-free, and easy to make. Perfect for breakfast or a snack.
Ingredients:
- 4 small/medium ripe bananas (or 3 large ones), mashed
- 4 large eggs
- 2 tsp vanilla extract
- 1/4 cup melted coconut oil, cooled
- 1 tbsp flaxseed meal
- 1 3/4 cups almond flour
- 1/2 cup tapioca flour
- 1 tsp baking soda
- 1/2 tsp baking powder (or Paleo-friendly version)
- 1 tsp cinnamon
- 1/4 tsp sea salt
Instructions:
- Preheat oven to 350°F and line a loaf pan with parchment paper.
- In a large bowl, mix eggs, bananas, vanilla, and coconut oil until smooth.
- In another bowl, combine almond flour, tapioca flour, flaxseed meal, baking soda, baking powder, cinnamon, and salt.
- Gradually stir dry ingredients into the wet mixture until just combined—don’t overmix.
- Pour batter into the loaf pan.
- Bake for 50-60 minutes until golden and a toothpick comes out clean.
