Hearty Paleo Banana Bread | GF/Paleo/Dairy-Free

This Paleo banana bread is soft, moist, and naturally sweetened with bananas—no added sugar needed! It’s gluten-free, dairy-free, and easy to make. Perfect for breakfast or a snack.

Ingredients:

  • 4 small/medium ripe bananas (or 3 large ones), mashed
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1/4 cup melted coconut oil, cooled
  • 1 tbsp flaxseed meal
  • 1 3/4 cups almond flour
  • 1/2 cup tapioca flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder (or Paleo-friendly version)
  • 1 tsp cinnamon
  • 1/4 tsp sea salt

Instructions:

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. In a large bowl, mix eggs, bananas, vanilla, and coconut oil until smooth.
  3. In another bowl, combine almond flour, tapioca flour, flaxseed meal, baking soda, baking powder, cinnamon, and salt.
  4. Gradually stir dry ingredients into the wet mixture until just combined—don’t overmix.
  5. Pour batter into the loaf pan.
  6. Bake for 50-60 minutes until golden and a toothpick comes out clean.
  7. Let cool in the pan before slicing. Enjoy!
