Ingredients:
- 3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup (60ml) melted coconut oil
- 1 cup (240ml) honey or maple syrup
- 1 tsp vanilla extract
- 1 3/4 cups (210g) GF oat flour (blend oats until fine)
- 1/4 cup (30g) ground flaxseed
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- Dark chocolate chips (optional)
- Chopped walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the melted coconut oil (or olive oil) and mix well.
- Stir in the honey (or maple syrup), eggs, and vanilla extract until combined.
- In a separate bowl, whisk together the oat flour, ground flaxseed, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and spread it evenly. Garnish with walnuts and chocolate if you want!
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
