Ingredients:

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup (60ml) melted coconut oil
  • 1 cup (240ml) honey or maple syrup
  • 1 tsp vanilla extract
  • 1 3/4 cups (210g) GF oat flour (blend oats until fine)
  • 1/4 cup (30g) ground flaxseed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • Dark chocolate chips (optional)
  • Chopped walnuts (optional)

    Instructions:

    1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
    2. In a large bowl, mash the ripe bananas with a fork until smooth.
    3. Add the melted coconut oil (or olive oil) and mix well.
    4. Stir in the honey (or maple syrup), eggs, and vanilla extract until combined.
    5. In a separate bowl, whisk together the oat flour, ground flaxseed, baking soda, salt, and cinnamon.
    6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
    7. Pour the batter into the prepared loaf pan and spread it evenly. Garnish with walnuts and chocolate if you want!
    8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    9. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
