Mixed Green Salad with Apple Cider Vinaigrette
This is a salad recipe I got out of the Earls Cookbook. They used to make this amazing mixed green salad in their restaurants. This fresh salad combines romaine hearts, mixed greens, and julienned green apple, topped with feta, candied pecans, and pumpkin seeds, all tossed in a tangy apple cider vinaigrette. Perfect for any meal! I've divided it into two sections. One, is assembling the vinaigrette and TWO is assembling the salad. Here it is!
Apple Cider Vinaigrette
Ingredients
- 3½ tbsp (52 mL) apple cider vinegar
- 2½ tbsp (37.5 mL) olive oil
- 1½ tsp (7.5 mL) lemon juice
- 1tbsp (15 mL) minced shallots
- 1 tsp (5 mL) peeled minced ginger
- 1 tsp (5 mL) lemon zest
- ¼ tsp (1.25 mL) sea salt
- ¼ tsp (1.25 mL) ground black pepper
Instructions
Mince, zest, and juice, then mix it all together!
Notes: Can be stored refrigerated for up to 5 days. Mix well before using.
Mixed Green Salad
Serves 4-6
Ingredients
- 8 oz (225 g) romaine hearts
- 8 oz (225 g) mixed greens
- ½ green apple
- ½ cup (125 mL) apple cider vinaigrette (recipe above)
- ½ cup (125 mL) crumbled feta
- ¼ cup (60 mL) candied pecans
- ¼ cup (32g) pumpkin seeds
