Ingredients
Wet Ingredients:
- 1 cup (240 ml) mashed ripe banana (2-3 bananas)
- 1/4 cup (60 ml) unsweetened almond milk (or coconut milk)
- 2 tablespoons (14 g) flaxseed meal
- 1/4 cup (60 g) almond butter (or cashew or peanut butter)
- 1 tablespoon (15 ml) coconut oil, melted and cooled
- 1 teaspoon (5 ml) vanilla extract
Dry Ingredients:
- 1 cup (96 g) almond flour
- 1/4 cup (28 g) coconut flour
- 1 teaspoon (5 g) baking soda
- 1/2 teaspoon (1.5 g) ground cinnamon
- 1/4 teaspoon (1.5 g) salt
- 1/4 cup (45 g) dairy-free chocolate chips, plus extra for topping
Instructions
- Preheat oven to 350°F (175°C). Line 9 muffin cups and spray with nonstick spray OR butter the moulds.
- Mix wet ingredients: banana, almond milk, flaxseed meal, almond butter, coconut oil, and vanilla in a bowl.
- In another bowl, whisk together dry ingredients: almond flour, coconut flour, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients, then fold in chocolate chips.
- Divide batter among muffin cups, filling 3/4 full. Top with extra chocolate chips.
- Bake for 18-20 minutes.
