Deliciously Healthy Chocolate Banana Muffins (GF/Dairy Free/Vegan)

Looking for a healthy and delicious muffin recipe? These Healthy Chocolate Banana Muffins are perfect for breakfast or a snack, and they’re gluten-free and dairy-free. Here’s a simple recipe that combines the goodness of ripe bananas, almond flour, and dairy-free chocolate chips.

Ingredients

Wet Ingredients:

  • 1 cup (240 ml) mashed ripe banana (2-3 bananas)
  • 1/4 cup (60 ml) unsweetened almond milk (or coconut milk)
  • 2 tablespoons (14 g) flaxseed meal
  • 1/4 cup (60 g) almond butter (or cashew or peanut butter)
  • 1 tablespoon (15 ml) coconut oil, melted and cooled
  • 1 teaspoon (5 ml) vanilla extract

Dry Ingredients:

  • 1 cup (96 g) almond flour
  • 1/4 cup (28 g) coconut flour
  • 1 teaspoon (5 g) baking soda
  • 1/2 teaspoon (1.5 g) ground cinnamon
  • 1/4 teaspoon (1.5 g) salt
  • 1/4 cup (45 g) dairy-free chocolate chips, plus extra for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line 9 muffin cups and spray with nonstick spray OR butter the moulds. 
  2. Mix wet ingredients: banana, almond milk, flaxseed meal, almond butter, coconut oil, and vanilla in a bowl.
  3. In another bowl, whisk together dry ingredients: almond flour, coconut flour, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients, then fold in chocolate chips.
  5. Divide batter among muffin cups, filling 3/4 full. Top with extra chocolate chips.
  6. Bake for 18-20 minutes.
