Creamy Fiesta Tortilla Dip: The Perfect Party Appetizer

There’s nothing like a colorful, fresh, and creamy dip to bring everyone together at the table. This easy-to-make tortilla dip combines rich creaminess with fresh, crisp vegetables, and the salty tang of olives. It’s a crowd-pleaser for any gathering, and it’s so simple that it can be prepared in just a few minutes.

 Ingredients:

  • 500 ml full-fat sour cream
  • 250 g full-fat cream cheese (1 block)
  • 2 tbsp mayonnaise
  • 4 large tomatoes, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 bunch green onions, chopped
  • A handful of pitted olives, ripped into smaller chunks
  • Salt and pepper, to taste
  • Tabasco (optional)
  • Tortilla chips for serving (I love using Que Pasa brand)

Instructions:

  1. Prepare the Creamy Base: In a mixing bowl, combine the sour cream, cream cheese, and mayonnaise. Blend the mixture until it’s smooth and creamy. You can use a hand mixer, blender, or immersion blender for a perfectly smooth texture. Refrigerate while cutting veggies. 

  2. Prepare the Veggie Topping: In a separate bowl, mix the diced tomatoes, green pepper, red pepper, and chopped green onions.

  3. Plating the Dip Base: Spread the creamy mixture evenly on a large plate, creating a smooth base layer. 
  4. Assemble the Dip: Pour the veggie mixture evenly over the creamy base, covering it completely.

  5. Top with Olives: Scatter the ripped olives on top of the vegetable layer.

  6. Season and Spice: Sprinkle salt and pepper to taste, and add a few dashes of Tabasco if you like a bit of heat.

  7. Serve: Serve immediately with tortilla chips for dipping. Que Pasa chips add the perfect crunch!

Tips:

  • If you’re making this dip ahead of time, prepare the creamy base and veggie topping separately. Assemble just before serving to keep the veggies fresh and crisp.
  • Add your own twist! You can also include other toppings like shredded cheese, jalapeños, or even avocado slices.
