This perfectly embodies my love for whole food snacks. These bars are a heavenly combination of Medjool dates, almond flour, almond butter, and dark chocolate, creating a satisfying treat that's not only delicious but also raw, gluten-free, and dairy-free to accommodate various dietary preferences.
Ingredients:
- 2 cups Medjool dates, pitted
- 1 cup almond flour
- ½ cup almond butter
- 1 cup shredded unsweetened coconut
- ¼ cup honey
- 3 ½ oz dark chocolate (70% or raw)
- 2 tbsp coconut oil
Steps:

Line an 8-inch x 8-inch square pan with plastic wrap and set it aside for later.

Begin by placing the Medjool dates in a bowl and covering them with warm water. Allow them to soak for 10 minutes, and then drain them thoroughly.

In a food processor, combine the soaked dates, almond flour, almond butter, shredded coconut, and honey. Process until the mixture becomes smooth.

Spread the mixture evenly in the bottom of the prepared pan, ensuring a uniform layer. Set it aside for now.

Melt the dark chocolate in a double-boiler on your stovetop or simply use the microwave. Once melted, add the coconut oil and stir until the two are well combined.

Carefully pour the chocolate mixture over the date base, ensuring even coverage.

Place the pan in the refrigerator for about an hour to allow the bars to firm up.

After the chilling time, remove the pan and slice the decadent bars into squares of your desired size.
