Classic Cheesecake Recipe

     

Here's a delicious cheesecake recipe that will impress your friends and family. Make sure prep ahead of time because there is are lot of long wait times. Let's get baking! 

Ingredients:

  • 2 lb (907 g) softened cream cheese
  • 3/4 cup (150 g) sugar
  • 1 ¾ cups (415 ml) sour cream
  • 6 eggs
  • 1 tsp (5 ml) vanilla extract
  • 1 tsp (5 ml) orange zest
  • 1 tsp (5 ml) lemon zest

Graham Cracker Crust:

  • 2 1/2 cups (250 g) graham cracker crumbs
  • 3/4 cup (170 g) melted butter
  • 3 tbsp (38 g) sugar

Instructions:

  1. Prepare the Crust:

    • Preheat your oven to 350°F (180°C).
    • In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
    • Press the mixture into the bottom of a 9-inch (23 cm) springform pan using the bottom of a stainless steel measuring cup. 
    • Bake for 8 minutes until the crust is golden brown and fragrant. Allow to cool completely.
  2. Prepare the Cheesecake Filling:

    • Preheat the oven to 225°F (105°C).
    • Beat the cream cheese until completely smooth.
    • Add sugar and mix until well combined.
    • Mix in the sour cream until smooth.
    • Add eggs one at a time, mixing thoroughly after each addition.
    • Add vanilla extract, orange zest, and lemon zest. Mix until all ingredients are fully combined (this should take no longer than 6 minutes).
    • Pour the mixture into the cooled graham crust, smoothing the top. Tap the pan on the counter to remove any air bubbles.
  3. Bake the Cheesecake:

    • Place the cheesecake in the oven and bake for 2 hours and 40 minutes. Place a pan of boiling water on the lowest rack to keep the oven moist.
    • After baking, turn off the oven, open the door slightly, and let the cheesecake remain in the oven for an hour.
    • Remove the cheesecake and cool to room temperature before refrigerating. Chill for at least 8 hours or overnight before serving.

Tips:

  • Use only full-fat cream cheese and sour cream for the best texture.
