Classic Cheesecake Recipe
Here's a delicious cheesecake recipe that will impress your friends and family. Make sure prep ahead of time because there is are lot of long wait times. Let's get baking!
Ingredients:
- 2 lb (907 g) softened cream cheese
- 3/4 cup (150 g) sugar
- 1 ¾ cups (415 ml) sour cream
- 6 eggs
- 1 tsp (5 ml) vanilla extract
- 1 tsp (5 ml) orange zest
- 1 tsp (5 ml) lemon zest
Graham Cracker Crust:
- 2 1/2 cups (250 g) graham cracker crumbs
- 3/4 cup (170 g) melted butter
- 3 tbsp (38 g) sugar
Instructions:

Prepare the Crust:
- Preheat your oven to 350°F (180°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Press the mixture into the bottom of a 9-inch (23 cm) springform pan using the bottom of a stainless steel measuring cup.
- Bake for 8 minutes until the crust is golden brown and fragrant. Allow to cool completely.

Prepare the Cheesecake Filling:
- Preheat the oven to 225°F (105°C).
- Beat the cream cheese until completely smooth.
- Add sugar and mix until well combined.
- Mix in the sour cream until smooth.
- Add eggs one at a time, mixing thoroughly after each addition.
- Add vanilla extract, orange zest, and lemon zest. Mix until all ingredients are fully combined (this should take no longer than 6 minutes).
- Pour the mixture into the cooled graham crust, smoothing the top. Tap the pan on the counter to remove any air bubbles.

Bake the Cheesecake:
- Place the cheesecake in the oven and bake for 2 hours and 40 minutes. Place a pan of boiling water on the lowest rack to keep the oven moist.
- After baking, turn off the oven, open the door slightly, and let the cheesecake remain in the oven for an hour.
- Remove the cheesecake and cool to room temperature before refrigerating. Chill for at least 8 hours or overnight before serving.
