Chocolate Ganache Cake

Ingredients:
- 1 1/4 cups (250 g) sugar
- 1 tsp (4 g) baking powder
- 1 3/4 tsp (9 g) baking soda
- 2 1/4 cups (290 g) all-purpose flour
- 1 cup (95 g) cocoa powder (dutched)
- 3 large eggs (about 170 g)
- 1 tbsp (15 ml) vanilla extract
- 10 tbsp (135 g) vegetable oil (1/2 cup + 2 tbsp)
- 1 1/4 cups (300 ml) buttermilk
- 1 1/4 cups (295 ml) strong coffee
- 1 1/4 tsp (8 g) salt

Preheat & Prepare:
Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23 cm) cake pans. -
Combine Dry Ingredients:
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. -
Mix Wet Ingredients:
In a separate bowl, whisk together the eggs, vanilla extract, and vegetable oil. Then, add the buttermilk and coffee, mixing until smooth. -
Blend & Bake:
Pour the wet ingredients into the dry mixture and whisk until everything is well combined. Divide the batter evenly between the prepared pans and bake for 40 minutes, or until a skewer inserted into the centre comes out clean. -
Cool & Enjoy:
Let the cakes cool in the pans for 10-15 minutes before turning them out onto a cooling rack. Allow them to cool completely before icing.
