Ingredients:

  • 2 cups diced tomatoes
  • 1/4 cup finely diced red onion
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • Black pepper to taste
  • 1/4 cup finely minced fresh basil leaves
  • 1 French baguette or bread of your choice
  • Additional olive oil
  • 1 large garlic clove
  • balsamic glaze

Instructions:

  1. Prepare the Topping: Mix together the tomatoes, red onion, balsamic vinegar, olive oil, salt, and pepper. Stir in the basil and let sit for 30 minutes to develop the flavors.

  2. Toast the Bread: Preheat the oven to 400°F (200°C). Slice the baguette into 1/4-inch pieces, place them on a baking sheet, and drizzle with olive oil. Bake for about 10 minutes until lightly toasted. Rub each slice with the cut side of a garlic clove.

  3. Assemble: Spoon the tomato mixture onto the toasted bread slices and serve. Drizzle with balsamic glaze.
