Banana Bread | GF/Paleo/Dairy Free

Ingredients:

  • 3 ripe bananas, mashed (approximately 1 1/4 cups)
  • 1 fresh banana
  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup melted butter (or coconut oil)
  • 1/4 cup raw honey (this is optional; if your bananas are nice and ripe you can easily skip this
  • 1 tsp vanilla extract
  • 1/4 cup walnuts for topping

 

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a loaf pan (8.5 x 4.5 inches) with parchment.
  3. In a mixing bowl, mash the bananas using a fork.
  4. Add the almond flour, tapioca flour, baking soda, cinnamon, salt, eggs, melted butter or coconut oil, honey, and vanilla extract to the mashed bananas.
  5. Mix by hand until everything is very well combined.
  6. Pour the batter into the prepared loaf pan.
  7. Sprinkle walnuts on top of batter (California walnuts are the best!)
  8. Bake the banana bread for 50-60 minutes, or until a toothpick inserted into the centre comes out clean. If the top of the bread starts to get too golden, you can cover it loosely with aluminum foil.
  9. Once baked, remove the banana bread from the oven and let it cool in the loaf pan for 5 minutes.
  10. After cooling slightly, slice the banana bread and enjoy with a delicious coffee!
