Banana Bread | GF/Paleo/Dairy Free
Ingredients:
- 3 ripe bananas, mashed (approximately 1 1/4 cups)
- 1 fresh banana
- 2 cups almond flour
- 1/2 cup tapioca flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup melted butter (or coconut oil)
- 1/4 cup raw honey (this is optional; if your bananas are nice and ripe you can easily skip this
- 1 tsp vanilla extract
- 1/4 cup walnuts for topping
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a loaf pan (8.5 x 4.5 inches) with parchment.
- In a mixing bowl, mash the bananas using a fork.
- Add the almond flour, tapioca flour, baking soda, cinnamon, salt, eggs, melted butter or coconut oil, honey, and vanilla extract to the mashed bananas.
- Mix by hand until everything is very well combined.
- Pour the batter into the prepared loaf pan.
- Sprinkle walnuts on top of batter (California walnuts are the best!)
- Bake the banana bread for 50-60 minutes, or until a toothpick inserted into the centre comes out clean. If the top of the bread starts to get too golden, you can cover it loosely with aluminum foil.
- Once baked, remove the banana bread from the oven and let it cool in the loaf pan for 5 minutes.
- After cooling slightly, slice the banana bread and enjoy with a delicious coffee!
